Ten-minute garlic chilli noodles
Pantry noodles with a glossy garlic, soy and chilli sauce. The whole thing comes together in the time the water takes to boil.
Serves 2 · Prep 5 min · Cook 10 min
Ingredients
- 200 g dried wheat noodles or spaghetti
- 4 garlic cloves, finely sliced
- 3 tbsp neutral oil
- 1 tsp chilli flakes
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp brown sugar
- 2 spring onions, sliced
- 1 tbsp sesame seeds
Steps
- Cook the noodles in well-salted water until just tender; reserve a cup of the cooking water, then drain.
- While they cook, warm the oil, garlic and chilli flakes in a small pan over low heat until the garlic is pale gold and fragrant — about three minutes. Do not let it brown.
- Stir the soy, vinegar and sugar into the oil, then toss with the noodles, adding splashes of the reserved water until glossy.
- Finish with spring onions and sesame seeds.
